The Winery and Vineyards

A rich history

Avelino Vegas SA manages over 600 hectares of vineyards, including 90 hectares of old vines, some almost a century old. These vineyards, located mainly in Segovia where the bodega is located, are generally small, ranging from 1 to 3 hectares, and are entirely dedicated to the cultivation of Verdejo grapes. The age of these vineyards contributes to the complexity of the aromas and the structure of the wine.

The perfect terroir

The grapes for this CIRCE Verdejo come from prized vineyards in the Segovian villages of Moraleja, Aldeanueva, Codorniz and Santiuste. Harvest is done by hand, at the peak of ripeness, to guarantee the best quality.

Production method: A careful process

Gentle maceration

A gentle cold maceration allows the must (grape juice) to absorb all the characteristics of the Verdejo grape. This method preserves the freshness and aromatic richness of the grape.

Controlled fermentation

Fermentation takes place at a controlled low temperature of 12°C. This careful temperature control ensures an optimal balance between freshness and complexity.

Maturation on fine lees

After fermentation, the wine is aged on its fine lees, which contributes to the silky mouthfeel and lingering finish. This process creates a rich texture and an even deeper flavor profile.
